Winemaker Notes: From the lower, later ripening block of Sémillon at Les Collines Vineyard. We increased the skin fermented portion from 40% in 2019 to 50% in 2020 bringing added richness and depth, while still bringing plenty freshness and nerve from the crisp, immediately pressed portion. Aged in in concrete egg (40%) neutral oak (30%), amphora (20%) and stainless steel (10%) Rich and textured with notes of lemon pith, golden apple, bergamot, beeswax, walnut and dry straw.
