William Fevre Chablis ‘Champs Royaux’ (2020) – A slightly riper nose also reflects good Chablis typicity with a bit more iodine character that continues onto the precise and delicious if not especially complex medium weight flavors that deliver a bit more weight and length on the balanced and firmer finish.
From purchased grapes, Champs Royaux is an historic mark created in the past by William Fèvre. 5% is fermented in old wood from Bouchard, with the rest in steel. Lovely notes of confit lemon here, very good acidity and minerality. A complex, saline, age-worthy Chablis which will go beautifully with food.
