Silvio Morando Piemonte Grignolino (2021) – The grapes are picked in late September or early October and go through a short maceration and gentle pressing. Grignolino grapes have a high number of seeds, which can make very tannic wines with lots of green notes if not handled delicately. Gringa = grape seed in Italian and is where the grape name originates. The wine ages for 9 months in a combination of stainless steel and cement before it goes to bottle. The wines receive a small dose of SO2 at bottling and are bottled unfined and unfiltered.
