Pago del Cielo Celeste Crianza (2019) – The Torres family is one of the most renown wine producing families in all of Spain. Their home vineyards are in the Penedes, and they shot to international fame with traditional wines and the innovation of using Cabernet Sauvignon in the 1970s. Pago del Cielo is part of their project to expand into other traditional wine producing regions of Spain in the early 2000s. When looking to expand into the Ribera del Duero the focus was to find vineyards at elevation. They found it on a site around Campo de Peñafiel where the vines are at an elevation of around 900m. It is the elevation that balances out the extreme daytime temperature of the Meseta and brings a brightness and elegance to the wines. The wine is Fermented in stainless steel and the aged for 12 months in a mixture of new and used French and American oak barrels.
