Lunaria Pinot Grigio Pet Nat (2022)
The “Pet-Nat” follows the Ancestrale Method, and is bottled without added sugar or yeast. Fermentation is paused mid-way for bottling, allowing the fermentation process to finish in the bottle with no disgorgement or dosage. About the Label & Thread Binding: The biodynamic project Lunaria Ancestrale thrives off the harmony of nature, land, and men. Catalysts in this circular economic process are sheep. During grazing, sheep naturally fertilize the soil of the vineyard improving soil fertility, nutrient absorption, and resistance to pathogens. In the spring to keep the sheep cool their fleece is washed and sheared. The sheared fleece is then spun into wool to be tied on the neck of the Ancestrale bottles.
