What an inspired organic Pinot Gris-Pinot Noir blend. This extremely pale rosé aged briefly in concrete and neutral French oak, with no additives except a tiny amount of SO2 at bottling. The wine’s aromas begin with dust warming on a light bulb and end with a bowl of yellow apples. It tastes like a lemon granita laced with mint. Searing acidity is this wine’s guiding star.
