Esja Carbonic Sangiovese (2023) – Sangiovese was picked early to keep alcohol levels low and keep the wine fresh and zippy. 60 percent of the fruit underwent carbonic maceration to add some fun and playful notes. After ferment it was pressed into a stainless steel tank where it was left to age on lees for 7 months. Racked cleanly and then bottled on April 5th.
