Spontaneous fermentation occurs in stainless-steel tanks after partial destemming and a 4-5 day cold soak. Pneumatic pressing and whole-cluster direct pressing precede a 12-month élevage in neutral 228-liter oak barrels. The wine is then transferred to stainless-steel tanks for an additional 3-6 months, ensuring a harmonious blend of flavors and a memorable finish.
