Daniel-Etienne Defaix Chablis 1er Cru Cote de Lechet (2010) – Domaine Daniel-Etienne Defaix is one of the icons of Chablis; the family is in its 14th generation! As such, they own some of the best vineyards in the region that highlight the classic Kimmeridgian chalk soils that define the wines. Firmly in the “unoaked” tradition of Chablis, an emphasis on using the spent lees kept in suspension as anti-oxidative elements ensure minimal to no additions to the wines. Their bottling from Cote de Lechet rests on the lees in stainless steel for 18 months with regular batonnage.
