Wine Tasting – Top Source Winemaker Meredith Hyslop

We are very excited to tell you about our next tasting event! On Tuesday, August 29 at 6 p.m., we will welcome Meredith Hyslop into the shop. Meredith is the owner and winemaker at Top Source winery in Washington. In addition, she owns Sapere Originis, a wine import company specializing in French wines. Meredith will present three of her Top Source wines and two of her favorites from France.

A native Washingtonian, Meredith began her wine career in Walla Walla many years ago when the area only held 25 wineries. After studying Enology and Viticulture at the Walla Walla Institute she moved to France to study in Dijon. Her studies brought her to the Languedoc-Roussillon region of France where she worked for 12 years. She returned to Walla Walla in 2020 and established Top Source to showcase the premium quality of her home state at a competitive price point.

TASTING LINEUP:

2022 Top Source Sauvignon Blanc (Walla Walla, Washington)
This is a fresh and cool white with aromas of white pear, gooseberry, white grapefruit, and fresh herbs. Crisp and crunchy with medium body and a pithy, zesty finish. 100% Sauvignon Blanc.

2018 Top Source Red Blend (Columbia Valley, Washington)
The palate is wonderfully stony with bright red fruits that mingle with orange rind, umami and pretty pomegranate seed flavors. The salty accents really make this sing. 60% Grenache, 40% Syrah

2019 Top Source Syrah (Walla Walla, Washington)  
This is a meaty, balanced Syrah with restrained alcohol and one purpose in life: provide optimal pleasure when opened. Aromas include dark raspberries, black olives, marjoram and fresh-cracked white pepper. The flavors are equally evocative, with blackberries, thyme, aged balsamic vinegar, and a mild streak of citrus.

2017 Gallen de Château Meyre Margaux AOC (Bordeaux, France)
Dark ruby red core. Fragrant nose offering wild berries, tobacco, mocha, fine oak and mild spices. Elegant medium bodied palate with plush red fruit, soft and rounded texture with gentle tannin, fresh and savoury with well-integrated oak and a smooth long finish.

2021 Domaine de Roujou Cuvee Silex Saumur (Loire Valley, France) 2021
A fresh and fruity Cabernet Franc from the Saumur district of the Loire Valley. Organically grown grapes vinified as naturally as possible to produce this elegant Vin de Plaisir. Serve lightly chilled.
