Split Rail Winery ‘Burn’ Gamay (2020)

From the Winemaker:

Gamay is traditionally bottled young as Beaujolais, so we ran with that tradition, and gave it our own quirky interpretation. While we didn’t ferment in carbonic maceration, we fermented on the skins in Amphora, pressed and blended in 15% Cinsault & 5% Cabernet, put it back in the Amphora for 4 months, then aged another 4 months in oak. Bottling this young, we bypassed malolactic fermentation, to keep the wine bright, fresh, and angular. High acid and full of fresh fruit, you get candied raspberries and crisp pomegranates with a lush tidal wave of oak in the background. This is food driven fodder, so open with pork chops slathered with cherry chutney or fatty cured meats and fig paste. With this acid profile, this daddy should be able to hang in the cellar for a bit. 120 cases produced
