This crisp white wine is made with a blend of Malvasia and Trebbiano grapes, grown in very low-yielding vineyards. It is a dry wine, with a delicate perfume on the nose. The grapes macerated on the skins for several days before fermentation using indigenous yeasts and the wine was kept on its fine lees until bottling. 40% Malvasia Puntinata, 30% Trebbiano, 40% Malvasia di Candia. Pair with cacio e pepe.
